Our Evolution Sparkling Wine is intentionally non-conformant to tradition, rather combining proven methods of all sparkling wine styles and using what we consider our best grape varieties to capture the most vibrant flavours of each Hencote harvest.

Winemaking
- Bunches are pressed whole to ensure absolute juice clarity.
- Conventional cold fermentation in steel tank optimises fruitiness and palate purity
- A break from traditional practice in that the blend is assembled unfined/unfiltered
- Tirage bottling for secondary fermentation takes place in early spring to retains grape esters
- Over two months special yeasts go to work in the wine to create the magic of sparkling wine
- Only 6 months from harvest bottles are riddled and disgorged at which point they are ready to drink.
Harvest
15th October – 9th November 2020
- 2020 was characterised by several spring frosts and low temperatures in the earlier months
- Shropshire saw a hot and dry summer which resulted in ideal growing conditions but the earlier frosts had a direct correlation with the low yields across the vineyard.
- As such, grapes were harvested and blended immediately
- Evolution 2020 was the only wine produced from the vineyard.
Tasting Note
Fine streams of bubbles sets off a lively mood leading to an aromatic nose of apple pie and rose hip which follows on in the mouth feel. All the components combining beautifully in a complex array of very drinkable sparkling characteristics. A maverick bubbly with endearing qualities.
