Made exclusively from Pinot Noir, this Blanc de Noirs showcases the richness and power of the grape while maintaining freshness and balance.
After secondary fermentation in bottle, the wine is aged on lees for 36 months, developing:

Traditional method. Whole bunch pressed with the premier cuvée 40% of juice in each press being retained for this wine. Although we have chosen only Pinot Noir as a grape variety to make our Blanc de Noir we ferment a number of separate fractions thereby creating complexity of flavour from the outset. After 6 months of lees contact in tank, the final blend is assembled for the “tirage”, after-which the secondary fermentation in bottle ensues. The decision to mature this particular vintage “sur lees” for 36 months has proven to be just the right length of time necessary to unlock the character and elevate the bouquet.
The harvest weather is providing extraordinarily fine conditions for optimum grape maturity. Timing of the pick is everything at harvest, and particular parcels from our Pinot Noir were selected specially to provide the right profile for this wine.
Pale gold with no apparent blush whilst fine lines of persistent effervescence rise slowly. The initial aromas of raspberry sherbet are underpinned by layers of bakers’ pastry with a touch of spice as tertiary characteristics from extended maturation providing volume which follow to the palate. The very soft yet concentrated bubble integrates a vibrant acid spine on which hangs an array of complex layers of subtle yet beautifully balanced flavours to fill out the mid-palate, gliding to a long finish.
