Winemaking
LXX is a traditional method Blanc de Noir made exclusively from Pinot Noir.
We hand-harvest select parcels of Pinot Noir vinifying them separately to capture the full range of vintage character. These wines are aged on their lees in tanks for six months before we create our LXX blend. After blending the wine undergoes secondary fermentation and matures on the lees for 36 months enhancing its autolytic character and elevate the aromatic profile.
Harvest
The 2018 vintage will be remembered as extraordinary, marked by an improbably warm summer and exceptional yields across the UK. Despite the risks, including a warm April followed by frost events in early May, the potential challenges were successfully navigated. Thanks to a prolonged period of warmth extending into October, our vines flourished under stunning conditions.
Tasting Note
Pale gold in colour with a fine, persistent stream of bubbles. Fresh raspberry aromas combine with buttery pastry on the nose, hinting towards the autolytic complexity and vibrancy of fruit on the palate.
