Using the traditional production method for sparkling wines, we carefully build layers of elegance and finesse. However, to emphasise the freshness and purity of our fruit, we limit the maturation period to just a few months. This approach retains the youthful exuberance that makes this wine fun, approachable, and exciting.

From Vineyard to Glass
The grapes for Evolution are grown on our south-facing vineyard overlooking Shrewsbury, where the combination of Shropshire soils and careful vineyard management produces fruit with bright natural acidity, ideal for sparkling wine production.

Our fruit is hand-harvested and sorted for quality. As with all our sparkling wines, the grapes are then pressed as whole bunches to extract only the finest juice. This juice is then fermented in stainless steel tanks using traditional yeasts optimised for elegance, aromatics, and mouthfeel. We follow the highest standards by secondary fermentation in bottle and aging the wine for up to 6 months before disgorging and serving.
A cloudy and wet start to spring delayed the growing season, but dry conditions prevailed through to the end of harvest which extended into late November. Moderate temperatures and rainfall characterised the vintage. We encouraged lower than average yields to concentrate flavours, maintain fruit health, and enhance wine quality.
An aromatic and floral nose full of apple and pear fruit. Clean, mineral character on the palate, with a succulent citrus finish.
