Our 2018 ‘Isadora’ Sparkling Rosé represents the vivaciousness and dignity of the Stevens’ family ladies. Comprised of three classic sparkling varieties and hand-picked from the Hencote Vineyard, the grapes in our Isadora Rosé undergo malolactic fermentation, adding a softness and creaminess to the wine. Each component has been carefully blended and matured for fifteen months ‘sue lie’ before release. Ageing in a traditional method adds complexity, but the aging process is a short enough time period that the wine retains its summer berry fruitiness. The combination of all of processes leads to flavour profile indicative of strawberries and cream.

Grapes blended from the field and to aid extraction were then destemmed for 6 hours of skin contact followed by 5 hours of gentle pressing. A standard cool fermentation regime followed in tank lasting 3-4weeks with 10% of the blend made in amphora. The finished wine was left on fine lees over winter in tank then later racked with stabilisation and tirage at bottling in early spring.

Pinot Meunier is chosen to be most suitable as the mainstay component for this wine for its consistently even ripening which provides a balanced ratio of grape sugars to fruit acids. With warmer conditions than usual the harvest was called in two weeks earlier with varieties ripening almost simultaneously across the board which worked out well for this our sparkling rosé. Components of a sparkling wine clone of Pinot Noir to bring structure and Chardonnay for an element of freshness were harvested from the mid and lower slope to make the blend.
Typically, a full style but with paler partridge eye pink set off by the gentle effervescence that persists, lifting an array of flavours from the glass. Primary notes of red currant jelly and pie crust combine with intriguing maturation complexity bringing a savoury element that carries over the palate with very finely tuned tannin and acid grip on the aftertaste.
