Our Evolution Sparkling Wine is intentionally non-conformant to tradition, rather combining established methods of sparkling wine styles and using what we consider our most suitable estate grown grapes to capture the most vibrant and happy flavours of each Hencote harvest.
Fine streams of bubbles set off a lively mood leading to the fruit forward nose of wild crab apple from the larger proportion of Seyval Blanc combining seamlessly with hedge row fruit pie notes of the Pinot Noir. Generous fruitful expression is present from entry on the palate but does not smother the elegance of the wine and leaves the palate refreshed. A maverick bubbly, approachable and appealing with endearing qualities.

The bunches are pressed whole with zero skin contact which gives very clear and pure juice. Conventional cold fermentation in steel tank optimises fruitiness and palate purity whilst a break from traditional practice is implemented thereafter as the blend is assembled unfined/unfiltered and the tirage bottling for secondary fermentation takes place as the temperature rises in early spring to retain grape ester fragrance. Over four months special yeasts go to work on the remaining sugars in the wine to create the magic of sparkling wine and the lively effervescence and by mid summer fermentation is complete at which point each bottle is riddled and disgorged to rid the wine of its sediment and immediately ready to drink.
After a mostly cloudy and wet start in spring, the season got off to a late start which perpetuated through summer. Dry conditions prevailed through to the end of harvest which ran late into November. A vintage of moderation in temperature, rainfall and the resulting production which suited our sparkling evolution.
