At the cellar door, a ruthlessly strict policy of “If in doubt, chuck it out” is implemented when sorting with no compromise to ensure only the best fruit is destemmed. Whole berries go straight to amphora for pre-ferment maceration under protection of inert gas to stabilise colour and optimise fruitiness. A spontaneous fermentation follows under carefully established conditions for grape borne yeast and those which populate the walls of the amphora. The aim in the making of this wine is to harness the natural order of life in the journey of our Pinot Noir from vine to bottle which ultimately manifests in an experience of the individuality of this place Hencote.

Following a particularly dry and warm summer, the weather cooled in the lead up to harvest and remained dry for a perfect final stage of ripening. Specific areas within the vineyard were ear-marked as ideal for red wine at the top of the slope where exposure to sun is maximised and soils are clay rich with gravel throughout. Only grapes with suitable phenolic maturity for red wine are hand-picked in the cool hours of the day to ensure optimum freshness.
Beguiling light ruby yet broodingly deep colour, initially intense with a wild red fruit berries taste, with tones of Loganberry and nutmeg. The nutmeg tones come from the natural sediment of the wine from the amphora – the truest form of Pinot Noir. A deliciously elegant palate with unbashful ripe tannin providing a satin-like structure which whilst still youthfully exuberant, the long and elegant finish promises a lot more to come in time.
