Whilst the use of amphora as a vessel to make this wine, plays an important role, the more defining feature of our winemaking method is what has become known as “Black Chardonnay” which is an age-old technique that embraces hyper oxidation of the juice before fermentation. The thorough and accurate execution of this drastic method in combination with what we see as most suitable for this style in the use of terracotta amphora enhanced by endemic wild yeasts where after nine months of maturation, results in our shimmering ”White gold” Chardonnay with extraordinary purity in expression and stability which will retain freshness and develop further complexity with age.
30th October 2018
In our northern latitude our premium Chardonnay is the last to harvest at the tail end of autumn in the tight window of opportunity as the leaves turn yellow at senescence. With a carefully timed harvest date the grape bunches were picked by hand. Bird damage was a problem at this late stage for Chardonnay due to the combination of a long maturation time, the characteristically translucent skin that the seed can be seen and the impending winter with a stimulus to collect food, however extra mitigating efforts against these potential losses paid off for fully mature and undamaged grape bunches on harvest day.
Striking white gold colour, good limpidity in the glass to lifted aromas of lemon zest and white pear showing good depth whilst the crisp acidity accentuates the citrus bouquet, finishing with cold river pebble purity.
Decanter Awards 2021- Silver (90)
